I can't seem to load bombs on bomber aircraft i.e., B-17G, JU-88 etc

 

What am I doing wrong?

You need to create a new payload first then name it and save it. Once created you will be able to select it. Hope this helps. Cheers.

But the Ju cannot load bombs just torpedos atm, right? Or did I overlook something?

Yep just Torps at present.
