Does anyone know if the moon and sun rise and set differently based on the day of the year? I am wondering if there is a particular date to set in the mission start parameters to get a harvest moon or something like that.

What you want is called an “Ephemeris”

 

They exist online and can tell you Sun / Moon rise / set times and moon phase for a given date.
