Pardon my stupid question. I just started learning the F-16 and from what I gather, in AG CCRP bombing mode I "designate" a target using the HUD as SOI and the cursor steered in to place with the RDR up/down/left/right (which I have mapped).

All that seems to work as planned... but once I have bombed that particular target, how do I re-center that cursor back to boresight?

This is strictly using CCRP, unguided munition, no TGP.

You don't center back to boresight but you do center back to steerpoint. Ignoring snowplow mode which doesn't really work right, the target position starts at the steerpoint. Whenever you move the cursor around you're adjusting something called system slews or system deltas which is the difference between the steerpoint and the target. This starts at 0 and slews are persistent. So if you slew the target 500' east of steerpoint 2 and then pick steerpoint 3 the cursors will be 500' east of steerpoint 3 (and 4 and 5 and 6...).

There is a special function called "cursor zero" which makes all the slews zeroized and puts the target back on the current steerpoint. This is done by pressing the omni-select button (OSB) next to the label "CZ" on one of the MFDs. The "CZ" function shows up on lots of MFD pages and any of them is fine, they all do the same thing. One thing that the F-16 should do is display "CZ" with white text on a black background when the slews are zero and changed to black text on a white background (called reverse video) when the slews are not zero. Then when you press "CZ" you should see the CZ label change highlight to let you know the function zeroized the slews.

Long story short, press CZ.

I've checked several times and I can't even find SP next to any OSB
