Regarding the SU-27 cockpit

trim stabilizer light

trim ailerons light

trim rudders light

When any one of these 3 lights stay on does it mean that they need to be trimmed or is it letting you know that they are trimmed?

The lights simply tell you that the control surface is in its center position. For example, you press ctrl+t to cancel trim then all 3 lights come on. There is nothing to tell you if you need trim. That would be your own decision.
