...the one with the lines labeled A 1, B 2 and so on.

Is it some kind of alternative to a knee board?

Something like that, it's just a cardboard card where you could write information on. Usually it was used for waypoint information like frequencies and altitude.

I think it would be a cool feature if we could click on it, it would pop out, and we could use a keyboard to write on it for some information (i.e. VOR/radio frequencies).

I know there are mods for this, but would be nice to have it as a dedicated module feature.
