What program does the Slap Switch run?

It doesn't run any particular program, but fires 40 chaffs + 40 flares as doubles.

I couldn't find a straight answer in the manual to quote, but this is in the CMDS_ALE47.lua:

-- MAN 6 - Wall Dispense button, Panic
programs[ProgramNames.MAN_6] = {}
programs[ProgramNames.MAN_6]["chaff"] = 2
programs[ProgramNames.MAN_6]["flare"] = 2
programs[ProgramNames.MAN_6]["intv"]  = 0.75
programs[ProgramNames.MAN_6]["cycle"] = 20

Oh that is HIDEOUS if so.  The Viper slap switch fires program five which can be programmed.  I usually set it to 1 flare and 1 chaff non repeated, so I can control their dispensing.

Well, as noted by Chump above, it runs program #6, but you can't access or modify it from the cockpit. The only way to alter it is to edit the file he mentioned.
