I've noticed a couple times now that after I fly a mission, sometimes, when I am watching the track of it afterwards, the ending is different.

For example, I was playing a campaign mission, I get one of my vertical stabilizers blown off (to what, I don't know but something hit me hard). I abandon the mission (which consequently fails) and try to fly my plane home and land. It's amazingly challenging just trying to fly straight and level but it's also completely fun.

Somehow I manage to land the thing (it's a rough landing that blows all the tires but heck, she's down).

Excitedly, I begin to watch the track after the mission. It's the right track because it's showing stuff that happened in the beginning and middle part of the mission but then my plane just basically nose dives into the ground. I'm pretty sure I would've remembered that.

Anyone have this happen to you? Is it a bug or am I doing something wrong?

It is a known problem with a variety of potential causes.

It appears, for some, that as long as you do not mess with time you are fine. Sometimes it seems that taking the veiw out of the cockpit causes problems.

In my experience, if you want to see what happened at a particular point, let the track run unmolested and just when you want to see. Hit pause and look around, then go back to the pit view and unpause. Not ideal but it helps me get some decents screen shots sometimes.

For just figuring out what hit me, I use TacView...not as pretty but it does answer the question.

It's a bug, there is a thread about it somewhere. Are you using trackIR or equivalent? If I have my facetracknoir running while viewing a track, it will work until I change views. Then I eventually nosedive. If I disable facetrack before the track loads, then I am free to change views as I please.
