Due to limited oxigen, i recon that they turn it on at a certain altitude....we probably need some clarification from RL pilots and theire SOPs concearning oxigenuse. Anyway, yes, you don't need oxygen until approximately 3000m, so it would be a waste opening from the start even though now that you mention I think 190 tutorial said to open oxygen as a part of start up. In 190 dizziness is modelled, eventually death, and you'll feel in your pilot if you don't open the oxygen, I haven't tried with 109. S!
