Possibility to use DCS updater functions on STEAM

There really should be the option to manually update/revert your Steam version.

Sometimes you can under the "betas" tab under game properties. That's the nature of Steam though, it's kind of a bastard for that sort of thing. See the Kerbal Space Program community, where running multiple separate installs of multiple versions is the norm so Steam doesn't overwrite everything :P
