I saw in youtube videos, many times guys are performing turns from about 3/4 of a aileron roll.Why is maneouver performed this way, why not just move stick sideways and pull it backwards.

Rolling the plane 90 degrees and pulling back is a high performance manuever. Because the wings aren’t perpendicular to the Earth, they won’t provide lift unless one’s speed+pulling back on the stick can generate “G” forces on the wing.

 

Most planes aren’t rated for that, and most actual owners don’t want to pay for the repairs of that kind of maneuvering. Non-urgent flying can afford to take the time to do a 30 degree bank+slight rudder input to make a coordinated turn.

 

I’m not an actual pilot, but I have flown via simulations.
