I have a simple formation flight where i try to keep up with an Ai flight - i can match the speed and altitude, but can never seem to stay in position as the Ai planes seem to be all over the place - or is that me.

Might be just you....

AI should be pretty stable unless you have them turning, then that is usually sporadic. I would get into a MP with a squadron and work with someone who can give you some guidance, reference points, etc...

should be quite stable,I practice with a simple loop with you as the wing man, start on the apron, wait for lead to taxi out and follow, fly between 300/400 kts.

you can try following lead in to land but it's quite a convoluted pattern, easier to just land on first approach...hopefully attachment works

maybe someone has a better solution, but I start flying fairly lose behind, mark the bearing lead is flying and then move up into parade, main focus on lead but frequent glances at hud to check bearing. After a while/plenty of practice you start to self correct the tendency to drift in

Its pretty much practice... The cliche of practice makes perfect is so true. Having a good lead helps as well...

Start off with the tanker, set a map with that thing flying straight and level and spawn your jet behind him. Set the tankers course for the full map or as long as you can and practice flying off of it. It should be fairly stable and no turns. AI tanker track turns ar not that bad they can be kinda abrupt though.

Easiest way to do it though is MP with someone who knows how to flight lead, fly form, and can walk you through your paces. Help you setup proper positioning and then give you feed back. Remember its easier to fly close in parade then it is far out (for me at least)...

After a while you're moving the stick and don't even realize you're doing it... you're just flying formation..

Edit to add: Setup your pitch and roll axis with some curves and consider some dead zone. I run mine at 12 for both with no dead zone so your MMV.

Practice, practice, practice and then practice some more. Pick a reference point on the other jet and try and keep that in view. It's easier in VR, but achievable with track-ir or thumb stick. Check X-51 Harrier display, we fly reasonably close form but have only done this by the above method, unfortunately there's no easy way young Jedi.
