I fly a mix of both US and Russian aircraft. I have my default units set to Metric, only because I started flying in DCS in the Su-25T and Su-27 and I've never changed it. I've been flying the F-16 recently and unless I am flying at 20,000 metres I assume that the aircraft automatically defaults to feet. Is that a correct assumption? So has something changed in recent years? The only time I really notice it is in the Mission Editor where everything is in metric, but I can do a fairly accurate conversion in my head. The unit setting shouldn't affect aircraft avionics, though I think FC3/4 is an exception in this regard, but I am not sure. So the F-16 for example will only show you imperial units, and that has always been like this. The unit setting only/mostly affects units outside of an aircrafts cockpit, so F2 view, mission editor, F10 etc.
