I watched a bunch of YouTube videos, to setup the Ah64D flight sticks, for basic flight. 

But when I push on the throttle for collective, I just spin in circles and crash. 

The same thing happened with my X-52's, so I bought the X-56 thinking it would fix the problem. 

What am I do doing wrong? I can't get this thing off the ground. Well I do, but I immediately just shoot to the right and crash into the ground. 

New to helicopters, I am sure its not the controls, I am just not understanding how to fly these things. 

I really want to though, I really want to fly the Apache. Real bummer I can't figure this out. Please help.  

How do I lift the helicopter straight up, an fly? 

I am not using the X-56 HOTAS software, just manually configuring the controls. Is there a good .lua profile out there that I can configure the stick and throttle with?

As Toaster003 implied, controlling the tail rotor with anti-torque pedals is imperative.

Generally speaking, if you want to keep the heading of the aircraft pointing straight ahead, every increase of collective will require some left pedal, and any decrease of collective will require some right pedal.

There are many videos on YouTube that can help get you started, specifically the official ones posted by Matt Wagner on the Eagle Dynamics channel.

OP, you should probably get yourself familiar with general helicopter flight and forces involved, before even delving into something complex like Apache.
