HUD Nav Mode ???

Can I switch the HUD back the "nav" mode ???

Can I switch the ShkVal TV off ???

Press backspace, this will reset the targeting system.

Both of those functions are accomplished by hitting the blue Reset button on the weapons system control panel on the left side of the cockpit. It's just to the right of the four blue buttons labeled "Ground Moving Target", "Auto Turn to Target", etc.

The KA50 pit to me isn't as intuitive as the F-16CJ pit that I'm used to in Falcon. But don't get me wrong, I like learning all of the new stuff :)

Really doesn't matter. All buttons/instruments are placed according to specific groups like in every plane or helo: nav, combat etc.
