I took a look at the NATO manual of the F5 and saw that the E version has circuit brakers behind the seat...DCS doesn't have them, correct?

Those are for the maintenance crew, the pilot wouldn't be able to reach out to operate them.

For the pilot, you do have this panel, on the left console:
