Is this not a thing?  Seems odd that there's no single attachment for the AMRAAM or Sidewinder.  Even weirder that there isn't for unguided rockets since they don't need much from the plane data-wise.  It looks funny having a single weapon mounted on the dual carry rack.  Really weird.

Single rail mounts for the AIM-9 and AMRAAM were never used by U.S. Hornets, same for rocket launchers. That came later with the SUU-80 outboard pylon on the Super Hornet (except rockets, which Supers can't carry at all due to the pylons being toed outwards).

The LAU Pods hold the rocket ignition mechanism and guides the rocket during ignition before it leaves the tube and surfaces are deployed.

As for LAU-127E/A,
The Legacy hornets never carried the LAU-127E/A directly on the SUU-63A/A Pylon, It was not supported.
They are only used on USN SUU-79/A and SUU-80/A Pylons on the Super Hornets.

For USN/USMC F/A-18C, Single AIM9/120 Configuration is LAU115C+2x127 (Dual) with a single store.
Switzerland Operators Bought and use a different pylon for Locations 2 and 8.
