What does it mean when an action includes <> in it's description? It typically includes "Special For Joystick" in the category. I have a Virpil stick and I'm wondering if I can use it with the throttle switches.

That means it's for a two position switch that switches between the 2 options listed.  If the switch only sends a signal when flipped one direction (Thrustmaster typically works that way) use this.  My WinWing throttle sends a different signal for each direction, so I just use the 2 separate bindings (ON for signal from one way, OFF for the signal for the other).  If in doubt, try and see which option works and with a few attempts you'll get it right.

I will tell you DCS control setup menu can not be beat imho.

There are a couple of weird naming things (I'm looking at you Hornet "Push to test" = radar altimeter warning level adjustment 🤨) but otherwise I agree.
