Without a curve the rudder (and more dangerously, the nose wheel steering) is extremely touchy, pretty impossible for smooth and accurate control around the center position. This is true in other DCS modules as well. For reference, I use a curve value of 30 on the rudder, pitch, and roll, which works very well for my setup for accurate control. Pulling the stick full back will pull those nice, big horizontal stabilators up and create more drag, which as you're seeing helps slow you down faster. And as others said, use those wheel brakes with anti-skid turned on. On a side note, I thought I liked less of a curve on pitch and roll until I started practicing aerial refueling... A curve of 30 was MUCH better! I've never used used curve on my joysticks and no extensions.
