I love copilots tiny head movements at startup. They give a little extra mood/dimesion-ish feel.
I would find it natural to see him tilt the head in turns, as he adjust to see the world in paralel with the horizon.
And it would be a nice immersion "boost"

Do the head movements not match what your copilot is actually doing? In which case, if the copilot is actually moving his head, then the model will match. Unless you mean something else?

I think he means that it would be cool, if the CPGs head reacts a little to the helicopters movements and g-forces.

Would also be great if the head could represent, what George is doing or in which direction he is viewing if no real CPG is in the front seat.

Everybody compensates with the head if in a vehicle that is at an angle; Keeping the head level with the horizon. I do it myself when turning in DCS.

Good wish! This would indeed add just that bit of extra!

Should have posted this on the general wish list subforum, as this feature would be great for all multicrew modules.

On the other hand, on the general wishlist subforum it'll probably be swallowed by all the (sorry to say) junk wishes.
