Being so use to EZDOK camera from FSX/P3D and then using the camera system in DCS feels awkward, especially in the cockpit. is there any way to make the mouse view pan only if I hold down the middle mouse button? I hate how if I accidently touch or move my mouse, it will pan. I would like to have an option to enable the middle mouse button to hold down and then pan.

 

Also would be nice if we can implement something like EZDOK into DCS. where we can set up different views and assigning them to different keyboard shortcuts.

To a limited extent, yes, but EZ-Dok allows much more than can be done in DCS. I suspect a full implementation would be a significant project.

Check the axis commands under the Controls tab in the settings.

First you need to set up a modifier (lower left) then clear the camera horizontal view and the camera vertical view (mapped by default to mouse X and mouse Y) and rebind them using your modifier.

You'll have to do that for each aircraft.
