Depends on the airframe and if it has already sustained damaged, but a series of EXPLODE UNIT triggers with a magnitude of 1, 1 second apart from each other should produce enough damage to force an ejection without killing the pilot. Use UNIT ALIVE as a secondary condition so the explosions stop once the pilot ejects.

 

You will see visible explosions like a SAM hit though, which you might not want depending on what you're going for...
