Eldur
I noticed that the outer elevon control surfaces have some jumpy behaviour just around the center of the pitch axis, which can be seen when moving it in F2 view. The two shots are almost at the same stick position. They move as expected from one end to the point where they instantly jump from one of the shown positions to the other one and then go on normally to the other end. This also happens in flight, making it almost impossible to do a steady high speed flight on the deck, at least at supersonic speeds.
ridgeback68
Can't say I've seen it happen. Might it be a stick/controller issue? I thought the altitude hold was broken as the plane kept losing altitude. Turns out my stick was slightly nose down in pitch even when centered. Put in a small dead zone around the pitch axis and it's now as steady as a rock. Worth a try if you haven't done it already.
Pocket Sized
This was discussed at length in another thread. TL;DR: SPAK freaks out on the ground as it is supposed to. As for your second issue: don't fly above M 0.95 on the deck unless you're running away from something that's trying to kill you. DCS modules are built up to a spec, not down to a schedule. In order to utilize a system to your advantage, you must know how it works.
