So, I take off from Nellis, fly for about 45min to an hour, and I'm holding north of Nellis to shoot the TACAN Rwy 21 approach. I look at the ADI and it shows 30 degrees nose up. I do a fast align and it sorts itself out. The same thing happened to my wingman a few days ago. Is this part of the design or a bug?

Your gyros will also get thrown out after reasonably heavy manoeuvring, acceleration and deceleration. Even persistent turbulence throws them out. Then add gyroscopic precession which occurs over a longer period of time. So this all as expected in the sim. AFAIK there is no gyro "cage" in the f5.

Not sure you can call it a "feature", 12k+ hrs of flight time in everything from an Extra 300L at 7+ G's to a B737 and have never had an ADI "drift" AHRS systems don't "drift" unless they're broke. and then they flag out. and in this particular instance, I never pulled more than 3g's. If it's a "feature" it may need some tuning.

No, it's a long standing issue with this module. Basically developers connected AHRS unit to standby gyro. They both accumulate exactly the same error, while in real life AHRS would be much more precise. Just like the ADI in L-39, MiG-21, A-10 etc...

I flew for 5 minutes the other night - I didn't exceed +2.2 g and bank < 60 degrees, and it had tumbled after a 180 degree turn.
