I'm sure they day will come when Norwegian F-35 are sent to intercept/ escort Tu-160 that are flying a patrol. Though I'd say the Tu-160 crew are more likely to smile, wave and take photos to share with their friends (F-35 pilots probably will do the same, remember the stories of Tu-95 crews asking intercepting Phantoms to perform barrel rolls etc for them which they would usually oblige) than engage the burners and try to run away. (which they can easily do being much faster than the Lightning II)

 

Besides that, yes we need more AI aircraft. Maybe not so much the fancy shiny stuff you mentioned but perhaps the "century series" (currently there are none), some British aircraft (there's only the Spit and Tornado), and more WWII aircraft in general to give the DCS warbirds some real value.
