The monster stuff is good but way overpriced and funds are very limited.

I wanted to lower the stick, as when placed over the desk it gave me shoulder pain. So, I built a custom shelf to place it lower:

I’d love to be able to lower the throttle too, but that will require a new desk ... perhaps in the future.

I built a post on a base so I could use joystick between my legs. I used a square post to help reduce the flex. Still tall enough that I get a tiny bit of flex. The base goes away from the chair and has my pedals on it to help weigh the whole thing down and keep it in place. Took off the plate on the bottom and made a small wood base to attach it to that in turn fits over the top of the post.

EDIT: might not work as well with the Cougar when I look at the pic above. The base looks bigger than my WH base so it might not fit well

Back in the 90s I had the f4 stick and the f16 RQS from Thrustmaster and I had two custom built extensions that clamped to the desk and placed the stick and throttle more naturally. By moving the hotas out from the desk the keyboard and mouse was at a natural location. It worked well for what it was. I think the monster tech system is well thought out and useful but pricey

The aluminium frames used by Monstertech or Foxx Mounts are easy to get and relatively cheap, in each length you want them. Average price is (depending on thickness) 15-35€ per Meter. You could then order just a few single parts from Monstertech (clamp spacer, mounting plates) and DIY, wich will keep costs relatively low while providing the same quality. Just make sure to order the same type of frame as there are different standards (B-type and I-type) and each beeing availabe with a different notch width (6, 8 and 10mm)
