I think the maximum G setting is good for the game and I wouldn't change a thing, well I don't refer to my chair but there is a good material for building an opinion:

If that makes a joy dog fight a realistic flight, it only teases the perception.

Overall a G meter is another gage to wach and use it to the minimum as the simulated fatigue does operate.
