Vapor cones only appear under certain flight conditions in real life. In external views, the sound is realistic for supersonic flight. The sound of the aircraft is not audible if your camera point of view is in front of the Mach cone for the current Mach number. If the Mach cone passes the camera (like in F3 flyby view) you will hear a sonic boom. "Subsonic is below Mach 1, supersonic is up to Mach 5. Above Mach 5 is hypersonic. And reentry from space, well, that's like Mach a lot."
