I'm finally putting the screw in my twist stick and adding a pair of CH pedals to my setup. Would anyone who uses these mind posting your curve, deadzone, etc. settings. I want to get off to a running start.

I usually start off by using the recommended curve from the Chuck’s manual (which I believe is 15 for pitch, roll, and rudder, but don’t quote me as I’m still at work and can’t check).  It’s usually at least a good starting point as you get familiar with the aircraft, and can then fine tune as necessary.

I recommend testing it for yourself:

1. Setting a deadzone for rudder pedals is only necessary if you experience input when you gently let your feet rest on them, without any intention for actual input;

2. Try any mission that lets you hot-start on the ground, and use that to taxi around: can you make accurate inputs without the need for overcorrecting? Can you comfortably turn on a dime on the deck of a carrier?

3. Try an IFR Instant Action mission: are you comfortable with the amount of input needed to counter the drag of the refuelling probe?

Based on that, you can make corrections accordingly. Myself, I use TPR pedals from Thrustmaster, and I use 0 deadzone and 10 curve, because I feel making small corrections is too tricky without a curve.

I don't use any curve (or X/Y saturation for that matter) on pitch and roll.

hmm.  Maybe I’ve just been lucky, but I’ve never had this issue.  Then again I only flew warbirds before I got the Tomcat, so “babying” the plane is second nature, and I never even thought about overstressing the airframe.  You are probably right - it makes sense that people coming from FBW crates would need to watch out for increasing load on the control surfaces at higher stick deflection.  Thanks for bringing this up!

My pleasure! It's been a real issue back in the day when people first got the plane and transitioned from FC3 or F-18's. Not for me, as like you i did migrate to jets from warbirds (though in other sims, many, many years ago), but complaints were numerous, and most from people with curves. I always sticked with the HB recommendations of not using any curves too. And max-performing the plane bellow 300knots still requires a very steady hand and quick feet 😄

I’d like to do that, but A/A refueling is difficult as hell even with my curves set to 10.  She’s a lot twitcher than she looks.

You can do it! It's just a matter of practice 🙂
How much of a throw does your stick have? Any extensions?

No extensions.  Actually setting up my brand new (today) MCGU.  Messing with spring tension atm.

No extension on my stick as well. I'm blessed with 11-12cm throw though, so that much help a bit.

I just got done fine tuning my stick (for now).  Actually I just posted a new thread looking for further advice on axis tuning which will probably get me crucified.  If you wanna take a look and weigh in any advice would be greatly appreciated.
