I'm struggling with the F-14 AFCS autopilot. IT sometimes engages when pressing the NWS button, and sometimes it doesn't(A/P ref light stays on). Some times after disengaging it via the stick paddle, i can't turn it back on via AP engange on the AP panel (A/P ref light stays off), even if i'm within the specified "within 30° pitch and 60° roll" of the handbook.

So is it a bug, bad documentation or am i just too stupid to let the AP fly the AC?

If you want to engage altitude hold, you have to be within +-200fmp on VSI, and more or less trimmed hands off, otherwise it wont engage.

Paddle will also disengage pitch and roll SAS, you wont be able to engage AP in that case. All SAS channels have to be ON for AP to work.

All this should be in the Handbook, but where ?

Disengagement of pitch and roll SAS and need for all SAS channels to be ON for AP to function is definitely in the game manual, and NATOPS.

That +-200fpm, that was stated in past update from HB. Its general knowledge here, but I cant find reference to it anywhere else either.

It's here:

The online manual is not yet updated. I have only 2004 NATOPS AAA-1 so it's DFCS unfortunately.
