Are memory kits matched?  If I wanted 64gb, but couldn't find any in a kit, would two 32gb kits work just as well, as long there the same of course ?

Depends on what you mean by "there the same".  Same brand, speed, and timing?  Then should be okay.  Matching means they're checked to be same speed and timing.

Thanks, just gets a little confusing when you can't get the kit you want for a particular MB.

You are on the right track but here is what you want to live by.  Start with the Manufacture and the boards support website. lets say ASUS.  They will have a qualified vendor list of ram and the kits of memory that they tested with the board. Isn't that great! You will see the part numbers of the KITS / HOW THEY CAN BE INSTALLED / HOW A KIT WORKS WITH THE BOARD. 

So by starting with the Motherboard List from ASUS, I can pick a kit that will work with my board without problems. Your answer is on the Manufactures support page. If I stay with a brand of motherboard like ASUS and a brand of memory like Corsair then things will be easy.
