Simultaneous weapon firing?

Pretty much the title. 
Is it possible to have 2 different weapon selected for PLT/CPG?
Like the CPG operates the gun and the Pilot the rockets at the same time?

Not really, while both can be selected, you can only fire one at a time. So pilot can do a rocket run and front seat can shoot gun after

Is this done IRL? It seems like a handy tactic to use to make sure people you just attacked are keeping their heads down while you fly out of harm's way...

IDK about firing but im pretty sure the pilot will often have the gun actioned and the CPG have the missiles so if they suddenly take fire from close range the pilot can just look and shoot while the CPG continues tracking and getting a helfire onto target

I'd prefer to call it "Combined engagement" and not simultaneous but I see where you are getting at
