solved VR - Blue cockpit lighting only rendering in one eye.

Can't remember the name of the toggle switch but it's on the right rear wall panel next to the white cockpit lighting toggle. When turned on the blue light only renders in one eye for VR.

I'm having a hard time finding the blue light you're talking about . The white cockpit lighting toggle switch is on the left rear wall panel. Can you post a screenshot please?

Right side wall right at the back near the back wall, lower row there's a NVG-compatible cockpit lighting. One right at the back is the normal (white) cockpit instrument lighting, while the one just left of that is a blue NVG-friendly light for the instruments. So just bottom right of the EEG switches. Probably means those. Think you need to have the white lighting off for the blue to show IIRC. NB the white cockpit lamp that illuminates everything, instead of instrument back lighting is off behind your left should as you mentioned.

@Grenadey Do you have an autoexec.cfg file present in your "Saved Games/DCS.../Config" folder? If so, ensure this line is not present, for it can cause such issues:

options.graphics.stereo_mode_use_shared_parser = true

@Volk., yes that's the one - I had tooltips turned off so couldn't remember what it was called - it is the NVG compatible cockpit lighting.
