Why does the pilot's body appear without the head?

Because otherwise the head would obstruct your vision.

Is there any way to make the head visible?

The easiest way would be to use the external camera and place it inside the cockpit.

The complicated way would be disable arg 114 so the cockpit and the pilot of the external model become visible, though there may be interference between the cockpit model and the visible cockpit of the external model.

But other than those, no. The pilot model of the cockpit doesn't have a head so there is no head to be made visible.

Like I said, go to an external camera view and move the camera inside the cockpit. That's how you get this cockpit view.
