Hi everyone, I was flying the BF and noticed this ODD behaviour when using rudder, the control surface does not stay in place according to the input, it start to flicker around. For note, I tested in all other planes and did not observe the same odd.

Check Special Settings in Options menu and if you have auto rudder and / or take off assist enabled

I've turned off those options under special tab

When I replay your track I see the rudder flapping. But when I take control, the rudder is steady and controllable. Therefore, it's not a problem of the Bf-109 module.
My conclusion is that your rudder somehow gets erratic control inputs. You say that the rudder works fine in all other modules, therefore there must be a problem in your control settings for the Bf-109. If you have any mod related to the Bf-109, I recommend you verify that it's not causing the problem, by disabling it.

None, double checked

Don't check axis assigments only, but all button & hat switch related ones as well.
