Since we have more and more Cold War content, it would be great to get the Nike Hercules system as well. I see someone started to do a mod but of course it's better to have an official add-on.

Nukes in DCS are a big NO-NO for ED: they have said that ad infinitum already.
I'd personally prefer not to have them either.

Would be totally acceptable if we only got conventionally armed missiles.

Absolutely! Didn't even know they came with nukes. Our ones would never have been allowed to be deployed with any.

Yes, that was the default configuration. They could potentially be configured with a conventional warhead for export, apparently.

But who's talking about a nuclear warhead here? We're familiar with the ED approach. A conventional shaped-charge warhead (500kg) is all that's needed.

To my knowledge the default setup in Germany was that sites were loaded with conventional fragmentation warheads, but each site had a US contingent on station that would guard and eventually deploy the nuclear warheads if needed. If swarms of soviet bombers would have been detected they would have been targeted with said warheads.
Outside of that specific scenario the sites were just part of "conventional" air defense.
