If going that route (video card solution), you can run three monitors off of an Nvidia GTX295 now (Non-SLI mode). Use an HDMI to DVI convertor to connect the third monitor. There's info about it over on the SoftTH forum. The Matrox TH2Go is an interesting product, and we may indeed eventually see a version that can support 3 1080p resolution monitors.
