After a while playing the plane started bobbing down to towards the ground. I checked the input graph but all was well. Did I accidentally trip an autopilot trim or something?

 

It later fixed.

Turning PAC on (from the gun arm switch) will switch to a different pitch trim "mode". When you turn PAC off, it reverts to your previous pitch trim setting. Is that maybe what happened?

Hmm. I used PAC with the first stage gun trigger only. Could that do it? Any way to reset to neutral?

 

Turn PAC off. It trims your aircraft and stabalizes it during the attack. The GAU-8 is extremely powerfull. Turn PAC off and see what happens when you pull the trigger.

I was going to make a new post about this but it's kind of on topic - I noticed with the new updates the PAC doesn't seem to stabilize the aircraft much or even at all when firing the gun. I checked to make sure my joystick trigger was still bound properly, so I know it's being activated, but before when I'd squeeze it a little it'd be like a firm hand was holding the plane in the air while I fired, but now the nose jerks up from the recoil.

Is this more realistic, do I have to hold the first stage trigger for longer, or what?

Frogisis, is it possible that you might have had speedbrakes activated? I think speedbrakes disable PAC. Might be something to do with update anyway. Don't know because I'm still running standalone v.1.1.1.1.

That's gotta be it. I read somewhere you're not supposed to use them while strafing but I just can't help myself. At least this'll break me of that habit.

PAC works perfectly. But PAC can't correct for a bad approach and a poorly trimmed aircraft.

Make sure your trim is somewhat ok and use around 30 degree dive angle.
