The big boys will probably correct me on this but I try to get nice, defined, basic shape of the airplane which is more or less a low poly airplane. My secret is to make the job as easy as possible while creating the model, smaller number of vertices, so that I don't have more work set out for me than necessary. When you finish your model, then you can apply the turbosmooth to see your High-poly aircraft but until you reach that stage just work with editable poly, with small amount of vertices.
