My flight stick hinders me from Aerial refueling due to the amount of dead zones it has, so I end up over compensating what should be like a 1mm adjustment. So you're waaaaaay better than me that's for damn sure.

The best way to deal with that is to set up curves on your axis. I use about a 10 on the deadzone and then a 25 or so on the axis curve with my Thrustmaster HOTAS Warthog setup. I keep the deadzone so I can have a little bit of play in the stick before I actually make an adjustment. I find this allows me to 'set up' for something before I actually go and do it and also just generally lets me rest my hand on the stick without the super-sensitive sensors making my plane move.

Cheers!

Well done man! keep training and you will fill up in one go no problem.

Also remember, always join on the left and exit to the right. You did a straight approach. Usual protocol is to fly formation on the left with the tanker to match speed, then go slowly to precontact, fill up cut engine and rejoin right till you are ready to go / your wing mates finish.
