In A/G mode with strong crosswind, I am flying towards a target by simply aligning ^ to the diamond at the top of the HUD. My velocity vector (VV), at the same time, is pointing way to the left. As I approach the release time, I must quickly change heading to the right to align VV with the vertical line over target. Is this correctly simulated? Why wasn't VV aligned with my flight path to begin with?

This is very very basic flying theory. IRL you would not progress beyond a piston propeller aircraft without understanding this concept.

No fault on your end, you had no instructor to notice this and show you what was happening. In the civilian world this is a mandatory topic before your first solo flight.
