This sounds like a problem with your settings. Under Options - Gameplay, check your Game flight and Game avionics mode. Also in special tab, check autorudder and take-off assistant. Maybe you have some options activated for singleplayer, but the multiplayerserver has them enforced off.

Standardmässig ist bereits eine realistische und bewährte Konvergenz eingestellt, wenn du an den Werten rumspielst wirst du es dir sehr wahrscheinlich nur schwieriger machen was zu treffen ;)

Ja da gibts leider wirklich keine Markierung. Ich hab das öffnen/schliessen auf den Boat Switch am TM Warthog belegt. Dann merke ich mir einfach wielange ich den gedrückt halte, so kann man das Rad wieder in Mittelstellung bringen. Wobei ich die Kühlerklappen in 99.99999% eh immer auf Automatik lasse. Ich fliege die D9 wirklich regelmässig, und musste die noch nie manuell öffnen/schliessen.

Wenn das Drehrad in der Mittelstellung ist, fliegst du mit der automatischen Kühlklappensteuerung. Wenn du das Rad nach links/rechts drehst, schliesst/öffnest du es manuell.

Die Joystickbelegung liegt im Ordner Saved Games/DCS/Config/Input, nicht im Hauptverzeichnis von DCS. Du solltest eigentlich von Steam zur Standalone wechseln können, ohne etwas neu zu belegen.
