In your quest for realism you've sacrificed two vital ingredients on the altar of correct scaling.
1: Peripheral vision
2: Moveable eyeballs
Peripheral vision allows us to be aware of things in a cone of appx. 100° around the centre. Our eyeballs can then swivel to focus on whatever takes our attention - all without moving our head an inch.
But with your scheme we are trapped looking down a rectangular tunnel. If we want to glance at our instruments we need to move our head. If we want to glance to the left we have to move our head. Only owls think this is normal.
So, while adjusting the games FOV to produce the correct scaling initially looks kinda cool, it bears no resemblance to how people actually see things in real life.

A little experiment with our own FC Mig-29A. 100% fuel used.
2:00 Invert aircraft
3:10 AEKRAN reports 600L fuel remaining
3:53 550L warning
12:46 Engines cut out
13:09 Level aircraft - engines restart automatically
13:43 550L warning extinguishes
13:46 AEKRAN 600L warning extinguishes
It took 1min 53secs for our 550L warning to appear after inverting compared to the RL aircraft which appeared immediately. Also at no point did our master caution sound, not even when the engines conked out.

Not a biggie, but it happens almost all the time.
Double-click the DCS icon, the little grey 'Checking for updates' box appears and disappears, and then....nothing.
Only after the second, sometimes third attempt does the launcher app appear

The current kneeboard counter is unrealistic (and looks a bit War Thunder)
So here's an idea to improve the realism and aesthetics!
This addition to the AI GUI more closely follows the layout of Petrovich's countermeasures control unit, and indicates remaining stores by active/expended cassettes instead of individual flare/chaff cartridges - much more realistic.

Once you get to activating the radios the text has filled the screen and starts going a bit mad.

I agree - so have Petrovic relay realistic information to the pilot.
Unless Petrovich is literally counting exactly how many flares he (and the pilot) has used (which seems un-realistic) then the only reliable information either of them have is from the countermeasures panel.
And the only reliable information the countermeasures panel gives is when you've expended 1/3 or 2/3 or ALL of your countermeasures.
Let Petrovich relay this information to you; let him warn you when you are down to your last third etc.
Here's an idea to add this info to the AI pop-up...

Pitch trim ignoring inputs?

It was driving me mad why the pitch trimmer was so flaky but it turns out roughly 50% of trim inputs are being ignored by the aircraft.
Compare the number of inputs (how often the hat switch moves) to how many times the joystick/plane actually responds.
And when it does respond it's in very coarse/large increments. It all makes trimming a nightmare.
