In the main menu under training. But if that does not work them just search them on YouTube. The videos are from the old Lockon flaming cliffs 2 but all the controls still apply

ED was planning on the MiG-29 and I think they still are. Check the unofficial roadmap its listed as undetermined

Im not so sure about the placement of the compass, as these cockpit pictures I've found of a sabre with the A-4 Gunsight show that they are in the top right corner. It would be nice to have it off to the right though.
