I'm running DCS at 1920x1080.

 

I was thinking of upgrading my monitor to a higher res.

 

How does DCS work at these resolutions...

 

Will the cockpit and full-screen mode resize nicely...looks better?

 

I understand there'll be a fps hit.

there is a thread somewhere here about folks playing DCS in 4K on a seiki TV. It might have some of the details you are looking for.

After trying it at higher resolutions is quite hard to go back. 4K is astonishing, but I had to go back to 2560x1440 because my 770 in SLI it struggle too much. So no matter what, 4k resolution is definitely a way to go if you have the possibility.

There are many folks using high resolutions, or multiple monitors, with no issues. DCS will accept, and display properly, at pretty much any resolution that you might want to use.
