In borderline positive G load after restoring the control stick in neutral position leads to unrealistic changes PITCH, which is not in accordance with the laws of physics.

Without detailed aerodynamic data it's difficult to tell if that behavior is wrong or right. What you'd need is the pitch inertia and pitching moment at that elevator placement at that Mach swept over those AOA. I agree it looks overly sharp.

 

We could make a very rough investigation using tail area as a flat board like a bar room dart and an assumed moment of inertia. The CP shift on the main wings I fear makes a large impact on the pitch moment that I don't know how to begin approximating.
