So I just flew at very slow speed for the first time since the last update. Was trying to do a high alpha pass, gear/flaps up/speedbrake in...the flight model really acted like spin recovery is engaged and with stick back will just throw the nose right up and let speed down to like 60kts.

Before I used to be able to transition gradually down to about 110kts and stick gradually back until full deflection then use throttle to control altitude.

Slow speed FM is definitely different...

Anyone seeing this?

Some other people had the Problem with slow speed (i.e. After take off).

Often the problem was, that after a update the FM changed to game mode.

Check out if this may be your problem too

I don't know when the change occured, but I can't remember that I was able to achieve 60° AoA and to do a loop at 90kts entry speed (50kts on top) in earlier FMs.

Pitch seems to be less stable and rather loose with the combination of low speed and high AoA.

Did a High Alpha last night and did not have this issues. Jet seems to be the same for me.

I believe that the point is that if you yank the stick fully aft during the high alpha pass, the pitch attitude and AoA will more rapidly and to a higher value than in (way) earlier FM versions.
