I have seen this issue regardless DCS version.

My scenario was 30K feet, > 1 March, and the altitude hold AP on.

The autopilot is not designed for flight above Mach 1.

Hold the stick, trim, attitude hold (just AP engage) probably can take it too.

have realistic expectations though, you will not get a hands off level trim at max speed.  AP "might" help once acceleration rates die off.
