So how do I deploy this weapon so that it doesn't drift to one of the runway or the other? If it lands in the grass, then whats the point?

as long as you have your approach pretty much aligned to the runway you shouldn't have too much difficulty in releasing weapon on the runway.. but if you are twitching and making small adjustments then probably you are banking a little bit to the left of right which is enough to make the bomb miss the whole airstrip and make a big hole in the grass instead))

Yes, runway damage is modelled.

 

As for the use of anti runway bombs, see above, besides, the 500-Shp is not an anti runway bomb per say.

 

Its an bomb designed to penetrate hardened structures by assistance of a rocket motor.

 

It also features a parachute to oriented the bomb near vertical before ignition of said rocket motor.

This parachute also ensures the delivery platform as suffiecient time to clear the blast area.

I've tried to hit bunkers with it, but no luck. It never seems to impact where the CCIP was when I released it. It just drifts too much.
