I have 3 monitors (one of them is a touch screen) and I use Helios software. No crossfire/eyefinity or whatever. Just "extended desktop". You can get all the essential info from the threads already linked here by the previous posters. My setup:

And one more thing: AFAIK, you get the 100% speedbrake only after touch down. Not while airborne.

Jona33 is right. You can "hear the noise". But there is no gauge to tell you the exact percentage of speedbrake opened.

No, there is not. You have to visually estimate the amount of speedbrake.

Maybe the comparison is not fair, but anyway: With every rally/sports car game/sim you can record a track and replay it easily. You can choose different angles, you can slomo, you can ff and rewind, or watch the recording frame by frame. With DCS A-10C you simply cannot. It would be nice, but I can live with it. I mean, without it. No problem.

I use Helios and I crash into ocean as well if I replay the track. My explanation: Seemingly the recorded track won't contain the Helios inputs. Before contacting the tanker you normally switch Master Arm and GUN/PAC to SAFE and switch Air Refuel Control Lever to Open. After those procedures you have to adjust your pitch to compensate/keep the level. Because the Helios inputs are not recorded, after starting your recorded track playback you simply crash into ocean. I have modified my stick and throttle curvatures. Mainly because of AAR (refuel). However, I did keep the deadzones as zero. Just try different combinations to find out what are the best settings for you. EDIT: Probably your Warthog (throttle) already comes with the latest firmware, but it's better to check the fw version anyway.
