I've often heard of Navy Hornets being sent up with around 1-3 missiles (heater and Slammer mix) for CAP, so I suppose it's not outwith the realm of possibility

TBH, that mix of all kind of missiles (AIM-120B & C, AIM-7, AIM-9) does not seem real at all in the F-15C. Currenly a normal combat load would be 6 x AIM-120 + 2-AIM-9 or 4 from each.

Is single AIM-9 loadout used in instant action mission common in RL?

A single missile of any sort seems odd. You'd normally have two of like type on the proper stations to minimize asymmetrical drag. FWIW, if you can trust what you read on the WEB, you would likely have some variation of these combinations...or less of each, say, 2 & 2 instead of 4 & 4.
